Catfish and Grilled Apples

<p />Cooked catfish tonight. Nothing fancy, fish was marinated in Italian dressing topped with Tsunami Spin. 400deg direct on a veggie tray for 4 minutes a side. Very good.[p]Later I tried doing Fire Roasted Apples for the first time. Modified the recipe in The Barbeque Bible page 512 (for those who have it).[p]Didn’t use the nutmeg, and the apples we used were fuji, not the galas. The local store had very small pitiful looking galas, so we chose a different apple.[p]Smoked them with a little plum wood, on a raised grid with firebricks on lower grid. Set the apples on a layer of tin foil.[p]I could have cooked them a little longer than the 1 hour at 325deg, but this was the first time doing these so I guessed when they were done. Gala apples should do better next time. Will also use maple or apple wood as we didn’t think the plum was the best choice after testing them.[p]Kids still liked them. We are planning on grilling some sugar coated bananas this week.[p]Its always fun to try something new. :-)[p]

    Boccie,[p]I just did some grilled pineapple slices that were super. Added a little brown sugar and a spritz of cinnamon to some slices about 1/2" thick, and threw them on the grillat 300-350 and let them cook about 10 minutes....they worked![p]Mike in MN
