Temperature Control

Newbie question:[p]How can I keep the temperature down? I can't get it to stay below 300. I've basically closed off the bottom hatch and the top is almost closed (smoke is coming out around the metal accessory top).[p]What's the secret here? Please--any and all ideas!

    Probably, the most important thing when trying to get a low temperature is to approach it slowly from below and start shutting down your vents BEFORE you get up to your target temperature. If you let the ceramic get hot and then try to reduce the temperature, you will have to wait a lot longer than if you start controlling the temperature before the ceramic gets hotter than you want.     Yo Joe,[p]The key is to let the temp build slowly to your target temperature. If you leave the vents wide open after starting the fire, the temp will build quickly.
    If you're at 300 and you've closed the vents, the temp will eventually fall to where you want it. Once your temp is where you want it, open the bottom vent to credit card width (for around 240 F) with the daisy slide closed and the daisy vents about 1/2 way open.
