My First Fatty

Okay, here is my first fatty. No stuffing till I decide whether I like it or not. This was Jimmy Dean's regular sausage with DP's Dizzy's Red Eye Express. I had not tried the Red Eye Express yet and I believe it gives the fatty a unique taste.

Just getting started. Dome temp of 250
About 3 hours into the cook and still waiting.
4 hour cook with one hour rest
I think there is a cheese omlet in my future for breakfast.

Looks great! I just made my first one too. They're so easy and good. I made one unstuffed and one stuffed and the stuffed one was hands done the winner. You have to try one that way.

Way to go TXTriker, looks like you're on to something. Now I also see ya have a partial glass of wine,how many glasses of wine does one have to drink to Egg a Fattie???
Hmmmm, will have to test that one out myself. Now if I can find a female volunteer to help me out??? :silly: :woohoo:

Actually Bordello, it depends on how hot the fire is as to how many glasses of wine. Might be a good idea to slow down the cook?

Ms Anne, you were going to do Mexican cheese and jalepenos. That sounded really interesting to me. Is that the cook you actually did with the one you stuffed?

Not one to give unsolicited advice, but tonight I will. You might wanna put a cement paver under that egg. Would hate to see it burn through the wood, fall and go to pieces. Just an idea to help out...

I wholeheartedly agree that you need a cement stepping stone under the egg before you do any high temperature cooks.

Never fear giving unsolicited advise to this kid. I've got brand new fire bricks, two boxes worth, that I'm waiting for my store to come lift both eggs so I can get them underneath. I've already asked them to do this for me the next time they do a drive by.
That is also one reason the small is still white inside. I've been holding back on using it till I get protection under them.
Thanks to all who were observant enough and cared enough to mention this.
