Question about injecting chicken..

I have injected chicken many times, all with pretty good success. However, tonight I smoked 2 chickens. One, I did with cajun type seasonings. The other, I used an injection recipe I had used many times before. The only difference, I added a small amount of pineapple juice. The cajun chicken was wonderful, but the other with the pineapple juice was mush... I just read that you shouldn't inject pork with pineapple juice, but does this hold true for chicken?

Hello there. You have to be very careful with pineapple juice because it is a very good natural meat tenderizer. Many tenderizers are made from the extract (Bromelain) of the stump or root portion of the pineapple plant. Another juice that you don't want to use on chicken is apple, it will make the skin very tough. Good luck in the future.

Hi Tim! Have you ever tried brining a bird, as opposed to injecting? I find it very effective.
