Eggs benedict with a jalapeno hollandaise sauce is frequently requested at my house on Sundays. It's so easy and since I've learned to make canadian bacon on the egg it's brought it to a whole new level.

    hehe...dunno why you posted that same post 3x times, but care to share your hollandaise sauce recipe?.. nice lookin cook btw ;)

    I'm almost afraid to post anymore. I cringe when I have to hit the "submit" button. Hopefully I'll only answer this 1X.

    I used to make my own hollandaise sauce and it's not worth all the the work since I've found McCormick's Hollandaise Sauce in the packet. I make it according to directions except where it says to add 1 cup of water. I take a small can of diced jalapenos and drain the liquid into the measuring cup and add water to make 1 cup. When the sauce is done I stir in some of the diced jalapenos. To finish it I sprinkle some smoked paprika on top which gives it a nice finish. The whole thing takes about 15 min.'s.

    Eggs Benedict along with asparagus spears and champagne too is a favorite here on all Holidays so we don't get burnt out on it. Something that makes it even more special comes from up your way from East Shore Specialty Foods in Hartland, WI. It's a dry Parmesan & Romano Seasoning we sprinkle on the sauce. It spikes the taste! Last time I tried to order it it was no longer listed in their catalogue so I called. They still carry it but in the store not the catalogue. I highly recommend it!

    I thought it was in your neck of the woods! BTW the label says it is "delicious on popcorn, vegetables and pasta"...guess they don't know about Sunday champagne brunches! :laugh:

    That sounds just delicious! I'll have to try your method next time I'm making eggs bennie. A friend sent us a whole "kit" of bennie makings for Christmas.

    You don't owe me anything, you're a quick study and easy to teach. lymywy BTW, if you take the same recipe for canadian bacon and use 1/2 inch thick pork chops you can maple smoke the same way. You will have some fine smoked breakfast chops. You won't be able to inject with maple syrup, but if you heat some honey up and brush on lightly about 10 minutes before pulling it wil be very tatsy. I just started the 5 day process tonight for mine.
