Kangaroo Steaks

A friend provided some kangaroo meat for NYE. I fired up the mini with a nice even bed of coals. I tried four different dizzy rubs on the eight medallions. Cowlick was my favorite with dizzy dust and raising the steak scoring a close tie for second. The taste was very good, it had a rich almost buttery flavor. As far as cook times go 6 minutes was rare and 8 was medium.

nice big chunks. we had some for sale, frozen, at a local grocery store. and they were "medallions" (read: small and thin).
tasted great though.
they are lean, so we cooked them hot, fast, and rare to medium-rare.ed egli avea del cul fatto trombetta -Dante -
