I'm almost glad those death peppers you had are gone, I was wincing every time yall would down one of those. There was a day when I would be right there with you, wolfing those things down too, but I guess I'm not into pain anymore.Haha. But they did look good! How are things with you lately? -
i don't eat those things just try to kill my friends or at least put them into a coma.. i am well all things considered, been a long couple months but the blessings are greater than the bad stuff.

Hay bill just got home from WORK!! :ohmy: The food pics look great except for all the stray cheese around the plate! Wife told me on the phone tonight at work " bill posted a great looking cook except he left cheese all around his plate. Just like a man to leave stuff laying around" :P For what its worth it will be morning by the time you read this. Hope Bisket let you have a little of the pillow last night! One down 2 graveyards to go. I need a few days off. Having a real job is killing me!

the zippy linguine was really great , Ben and i cooked together and he loved the noodles . they were so good i am making them again tonight and just serving with butter salt and pepper..
how do you knead/ mix your dough??

I mix it in the kitchenaid with the dough hook to get it all together, then I hand knead it on the counter (which is where the fine tuning comes in - added flour, proper consistency....), then I cut it with a pastry cutter into small chunks & run it through the KA roller to desired thickness, cut, then hang it uphappy in the hut

thanks that is what i did .. except i have the atlas hand cranked and i am not excited about it as it does not cut well maybe i can adjust it.. i need more experrience in the consistency department. practice makes perfect.

the consistency comes in the hand kneading segment, & you can also cut by hand, take your finished sheet & roll it up, then cut it with a knife to desired width, or, leave the sheet flat & cut with a pizza cutter; santa brought me an oldschool dowel type rolling pin & I am itch'n to go prehistoric on an upcoming batch, no electricity whatsoever, we'll see how that goeshappy in the hut

i can do pennslyvania dutch too and what is more pa dutch than scrapple and corn meal mush . the thin stuff is buckboard

was orignally titled the pennsylvania dutch version of big'uns triple threat.
however i think Pa dutch porkgasm is better -
