Yet Another Butt Question
At 1030 this AM, after 18.5 hours of cooking on the Egg at approx 240 degrees dome temp, the 10-lb Boston butt was at 192 degrees. Then about 10 minutes later I noticed that the dome temp was dropping. I took the butt out, wrapped it in heavy duty foil, and put it in a 250 degree oven. Reloaded the Egg with charcoal. This took about 20 minutes to get the temp right and burn off some of the sooty smoke. Put the butt back into the Egg at 1100. The internal temp is now only 177. What's going on? Our relatives will be here in another hour and we'll be eating lunch in two hours. I've cranked the dome temp up to 280 or so, but it doesn't seem to make much difference in internal temp. Still 177. Any suggestions? Thanks.

Jerr, Tent with foil, keep egg at 300. You can pull it off at 195 internal if you must but I'd recommed no lower
