Does anyone have a Good Luck Blackeye Pea Recipe for egg?

Peas, Black Eyed, Tennessee Jeanne's New Years Day


INGREDIENTS:
2 Lbs. Black Eyed Peas, Dried
2-4 Lbs. Ham Hocks, Smoked
2-3 Medium Onions, Sliced
Lawry Seasoning
Salt/Pepper To Taste




Procedure:
1 Soak dried peas for 12 hours/overnight. Drain. Place in heavy pot with all other ingredients. Cover with water + 2 inches, bring to heavy boil, cover, reduce to simmer, cook 4-6 hours. Stir occasionally to prevent sticking.

I use a dutch oven. Do the sauteing on the stove, then the simmering on a 300 or so Egg for an hour or an hour and a half.

Man those look good! Can't wait for tomorrow so I can have some. I got one of those do just for the egg and it really works out great. Can you detect any smoke flavor? Maybe in your seasoning meat?

Probably doesn't add much smoke in an hour or so on the Egg, but it's easy, good, and fun.

I cheat; a bag of peas,pint of chicken stock and country ham pieces in a crockpot. I adjust seasoning in my bowl.
