  • Quick Question:

What part of the pig are you cooking.

At what temperature and for how long?

    Thanks
  • It's a 9.4 pound butt. It's cruising along at 230 F dome. Started at 9:30 last night and current internal temp is 165 F. Will pull it off at 195-205 F hopefully between 1:00 and 3:00 this afternoon, wrap in foil and towels, put it in an ice chest, and take it to a New Years gathering around 5:00. Pull it just before the carniverous guest start getting too roudy.

Frank you might want to kick thatdome temp up just a it to about 250° just to be safe in having her done on time.

Mine is for a party of about 40 + I am cooking one for myself  I put them on about 1145pm MST and they are crusing right 1000am MST, internal is 155°
  • I'm at 181 at 11:30. Should be fine by 3:00. Butts for 40 - nice.
