ABT's and Jack Daniels Chicken Bites

Got the fever today for some eggin and decided to cook ABT's and some chicken bites wrapped in bacon. I've never cooked either of these so it was a trial thing. The abt's was stuffed with creme cheese and diced smokies that had been mixed together with DP Red Eye Express thanks to Dizzy Pig for the free sample. It worked guys! Ill be ordering some of this stuff in the next few days. :woohoo: The chicken was divided into two batches. One was marinated in Jack Daniels marinade that I made up myself then wrapped in bacon and the other was just wrapped in bacon and dusted with Red Eye Express. All of it was put on and cooked indirect at 350 for almost an hour and then I took the plate setter off for about 10 minutes worth of direct to crisp up the bottom side. Over all we loved everything. The wife and I both agreed that the chicken was definately the winner. As far as the whiskey or Red Eye Chicken, it was a tie. You could eat a few pieces of the Jack and think it was the winner, but when you ate the Red Eye you would change your mind. Thats some great stuff DP! Enjoy the pics.

Thanks much for sprinkling our stuff on your hard work! Glad you enjoyed. The Red Eye is a very unique concoction, and I always wonder how folks are using it. I mainly use it on lamb and beef, but we have been doing demos at Whole Foods, and using on chicken once in a while. Amazing how many people grab a bottle after tasting it, even though so many of our other rubs are better on chicken! Very cool that you got some use out of the sample, and thanks for posting your pics.

Great looking ABTs! Chris RE Express is probably one of our favorite rubs..two things I ALWAYS use it on.. whenever I make a bloody mary, I douse it with about a teaspoon to a tblspoon of RE Express and mix, also, every saturday morning I make a family breakfast of fresh sausage, biscuits, saw mill gravy, and eggs. Kind of a tradition and our weekly b'fast splurge. Anyway, I ALWAYS sprinkle both sides of the sausage patties with RE express before cooking. The coffee base in the express is great with pork sausage and the little added kick makes takes it over the top! Great rub. Thanks!
