Chicken advice

Im cooking some ABT's tonight for the first time and Im also trying to re-create a chicken bite that my wife and I ate in a Brazilian steakhouse in Atlanta. It looked like they just cubed some breast meat and wrapped in bacon and smoked. I was thinking I needed some kind of marinade for the chicken cubes before I wrap them in bacon. Anyone ever tried this? Thanks

I would think that anything from jerk sauce to terryaki to a bourbon glaze would be outstanding. May have to cube up some chicken and try that this weekend.

If it is wrapped in bacon I don't see how you can go wrong. Everything is great in bacon.

For the chicken bites, try a garlic and pepper style marinade. Smoke em, but hold up on the bacon til the end. Then wrap the bites in "chicken fried" bacon. Cmon now, you know that you want to try it.
