Marvelous Meat Loaf

I love good meat loaf. That means I'm often disappointed, because good meat loaf can often be the exception rather than the rule. Mom makes great meat loaf, my wife struggles a little bit, with an almost equal number of successes and failures. I don't think I've ever eaten meat loaf in a restaurant that I considered "good", though I keep trying. Today I decided to roll the dice and try it myself. I went to one of my "go to" cook books to see what they had. Jamison & Jamison's "Smoke and Spice" is just a great book for anyone cooking outdoors. Their recipes adapt to the Egg well in just about every case, though the Mothership really needs to give this author couple an Egg to get them on the path to righteousness. Their recipe is called "Ain't Momma's Meat Loaf", which I have just added, with my Egg modifications, to the Cookbook.
Their unique twist is to turn the meat loaf out of the pan about a third of the way through the cook, avoiding a greasy finish and allowing more uniform smoke penetration. It worked as advertised and to my great satisfaction.
Here's a couple of pics.

I agree about the meat loaf, and while I like that recipe I actually like this one better:

Finished it looks like this:
BTW I much prefer my meat loafs smoked with cherry wood (also something Mom couldn't do in an oven!) and therefore I use this wire mesh meat loaf basket designed for smoking and releasing grease.

Love meat loaf on the Egg! I do mine on the Hol-E Smokes silicone mats from the BBQ-Guru folks.
Yours looks great! -
Love that pan! Where'dya get it?

I was dreaming about meat loaf on the egg just last week. I knew I had seen a wire mesh loaf pan somewhere before, but for the life of me couldn't find one. I ended up making one from a slavaged resteraunt fryer basket. As soon as the ice melts form our deck, I'm out to give it a try!!

Hey Ron. Recipe looks good, but don't forget about Cat's meatloaf (is it still in the recipe section?). Almost any meatloaf is a good meal. Cat's is the best I've tried.
Yours looks good, and the cherry smoke sound perfect.
Cheers!

This recipe is worth trying if you haven't. Serve with QBabe's goat cheese mashed potaters!

My stomach just growled, and I am stuffed full.
Looks incredible. What did you serve it up with?
Cheers

That looks fantastic. Nothing better than a good meatloaf. Never tried on the egg but will after seeing these pics.

Sauteed kale with buckboard bacon chunks and a salt crusted baked potato. It was all stellar.

Those are great pictures, crystal clear. Being as my camera fell and was damaged at the airport I will be researching for a new one down the road. What did you sue to shoot those pictures???
Thanks,
Bordello -
Thanks.
I shot that with an Olympus C-5050. Unfortunately, it's several years old and discontinued. It is a bit of a rarity in that it is a camera that looks like a camera. I haven't studied much on what is currently available, because I'm quite please with this one. I have always had good luck with Olympus cameras. Canon has some very nice designs right now, too. Though many may disagree with me, stay away from Nikon unless you're buying the top of the line. Their SLR's are among the best in the world, but on the rest of the line, you're just paying for the name. I would look at what's available from Canon and Olympus in an all-in-one zoom lens camera with manual controls available. A few years ago I won an underwater photo competition with this little all-in-one against dozens of divers with SLR systems that cost 10 times what I had in my rig. Whatever you pick, learn to use it and don't blame the camera for failures. In most cases, bad photos come from what is behind the viewfinder, not what's inside the camera. -
Hi Chris,
QBabes goat cheese mashed taters are da bomb. Will have to try Cats meatloaf soon.
Happy New Year,
Bordello on the hunt. :woohoo:
Never met a hooker I didnt like. :woohoo: :woohoo: :woohoo:
No sense of Humor here. -
Fisrt, thanks for input, much appreciated. It's funny you bring up about usually it's not the camera's fault. I was going to go back and edit my post as I meant to say your picture may be so good because you Know how to use it.
I have read post on camera rwhere someone in complaining about their expensive camera taking bad photo's only to have others tell them it's not the camera as they all had great pictures,it's the user not knowing what the settings mean.
Thanks for sharing,
Bordello -
I copied the recipe from the list and planned on doing it this evening. I did this before I read your post. Looks great. I hope mine turns out as well. Thanks for posting the recipe.

Hope it turns out well for you, Gordon. It's two hours until lunch and I'm salivating already thinking about meatloaf sandwiches. :woohoo:
Just take it easy when turning the loaf out of the pan. I ran a rubber spatula all the way around the loaf and as far under it as the spatula would bend. Then put on some grill gloves, drained the juice, and sort of rolled the pan over gently. It popped out just as advertised!
