Smoked cheese is always a welcomed gift and I made two batches. This is the first batch.

All done.

Then there is steak on the mini. Simple, classic mini cooking at it's very core and essence....

What better antifreeze than my 'Wet Martini' before and after a good steak? Here is my version of a classic martini. I think you will like it- not as dry, just a tad sweeter than the common mix. Stay with exact ingredients for best results.
You can double the amount for two.
Clay's Wet Martini
In a shaker add;
5 ice cubes
Three oz. Gordon's London Dry Gin
Half an oz. Martini&Rossi Bianco (white vermouth)
Shake 11 times, no more
Pour into frozen martini glass
Garnish with a Pearl olive.
Enjoy!

gin and vermouth with an onion was, in the olden days, a Gibson.
My aunt used to be able to pound down half a dozen before dinner and a couple of more with dinner and never slur a word. -
That's a good Yank for ya!
 Can only say it cuz I am one! (Raised in Boston) Not a slurr in the world! (or is it because our accent is throwing them off??).   -
martinis used to be all vermouth and a touch if gin. it's been reversed over the years.
i can't have more than three before i slur my words.
your aunt sounds like a great old gal.
by the way. how did you learn about removing lipstick stains? do tell.ed egli avea del cul fatto trombetta -Dante -

Great looking cheese! What wood did you use to smoke them with? The martine looks great but will let you have the pine sap! I'll take mine with vadkia.

Hi Clay, dumb question on the nuts and bolts for raising the 2nd deck, are they SS? any harm if they are not SS? Also, I can't attach each leg to the upper grid without sandwiching it between two washers, in your picture I can't make out whether you have one washer and one nut below the grid, or is that a flared nut? Would appreciate your advice. Thanks.canuckland

Good Mornin,
Not a dumb question at all my friend. Well all hardware- nuts, bolts and washers are stainless in my setups because the hardware sometimes comes in contact with food. Stainless is not that hard to purchase, all the big hardware stores have it in stock and most major chain hardware supply stores like ACE and TRUE VALUE should have it in stock also.
As far as zinc coated or plated steel is concerned I'm not 100% sure if this hardware is safe when associated with food contact surfaces. So I'm not gonna say that it's ok to use although it might be.
My raised grid setup uses a Weber 14" nickel plated grid and three carriage bolts, each mounted with one washer and a nut. The round head of the bolt becomes the 'foot' of the raised grid setup. You could also use two washers to sandwich the grid and secure with a nut if you need to.
I hope this helps,
Good luck on making a raised grid, I like mine and I use it often. -
Hey buddy, I was thinking of you when I posted the pic's --cause your going back to work it's time to celebrate. :woohoo:
Vodka is good.
I drink gin, Doctor's orders. It's the herbs in gin and vermouth that make it medicinal.
The truth is....Gin came about as a tonic and was much sweeter...... Many many years ago in Holland, a Doctor came up with a recipe using spirits, honey and herbs for his cold patients and it eventually became very popular. The British got ahold of this tonic and distilled their own version making it much dryer, that is, less sweeter. Now all our common gin is dry thanks to the Brits. All recipes are guarded secrets and there's some interesting readings about this.
Enough of the history lesson. Time to bundle up and shovel the drive again.....

Are those 3/8" nuts and bolts? To attach each bolt to the 14" grid, is there another nut below the washer?
As for SS, there's no ACE nor TRUE VALUE here in Ontario, Canada. At Home Depot, I only found SS bolts with hex head that's too small to stay on the larger grid below...oh, btw, the price is ridiculous too - almost $10 each ($8.xx plus 13% taxes) At this daylight robbery price I might as well buy an adjustable rig + spider.canuckland -

Yup, 3/8"
Ouch! That is high priced.
tjv's accessories are top notch and a great way to expand your egg's cooking capabilities.
Good luck.
