Chicken Cutlet Broccoli Rabe Pizza

The classic chicken cutlet sandwich with sauteed broccoli rabe, sharp provolone & fried long hots translates beautifully into a pizza. There are a lot of steps but all easy, & if you make it just make extra for some sandwiches the next day, it won’t take any extra time:

To make, first fry some long hot peppers:



Make the cutlets & fry in the same oil:











Steam the broccoli rabe (in the microwave is easiest) then sautee it (again in the same oil):





All together on the pie with some grated sharp provolone & mozzarella:

Not much of a broccoli lover, but that chicken looks great. Sammies for me. A little smoked swiss on toasted buns. :woohoo:

very good choice Mike, that is the usual way this is done, real good when the roll is nice & hot & the chicken is right out of the grease :evil:
