Buffalo Oxtail Suggestions Appreciated

Have some grass-fed buffalo oxtails to Egg! They are about 3" thick and 4" wide. Haven't seen any oxtail recipes yet...any and all suggestions much appreciated

You could maybe smoke them the same way you do hamhocks and make oxtail soup. Your cuz, thirdeye
has instructions how to smoke hamhocks on his website. How weird is that to find out he's your cousin!!
BTW- Just curious about where you're getting your grass-fed buffalo. We eat a lot of buffalo, I order from

With only minor changes, I've used Mad Max's technique for beef oxtails....they are good. following the cook, I did set the Dutch oven in the beer fridge overnight (with the lid off) to let the fat set-up so I could remove it.

There's a couple of small, specialty grocers in Albuquerque called Keller's. HUGE organic meat market, smoke own turkey breasts for deli and whole for holidays, make own sausages, freeze items after a few days--great for our 400+ mile round trips :laugh: Have also bought from www.buffalogals.com but not in a few years. Sold--rather "gave away" all hunting rifles/scopes, so no more over the top antelope hunts for this gal! Besides, the game down here is awful scrawny :pinch: -

web link had link to Hawaiian-style--looks good too, but would use beef--afraid buffalo may be a tad strong for lemongrass and ginger--will save for next Hilo experience where can get wonderful ginger fingerlings and fresh lemongrass cheap at open stsreet market

btw,thanks for the encouragement to turn the egg-holding 230 very steady facing north with winds 5-10 with 20mph gusts from predominantly south--that is for the past 3 hours...now getting those 45 and up swirling gusts---only down here, they don't last year round

I got a hold of my "lifeline" (Carwash Mike) and he said to try a mix of hickory and a sweet wood like apple.

I say Ricky Bobby does the physical for intrastate transportation.

got the apple for the pork shoulder we did the first weekend--really like the taste
will pick up some hickory from the local dealer--hickory flavoring (as in commercially processed foods) can be overpowering.
Mike, what ratio of apple to hickory would u recommend?
remember, I'm new at this playing with smoke game!

That would be the perfect job for him! Melissa should've been warned when she first met him he had a piece of beef jerky in a glass of water in his dorm room and told her he was trying to see if it would turn into a steak. :laugh: Sad part is he was serious.

50/50. You'll never go wrong with fruit wood and a combo of hickory.
