Grilled Asparagus
Basselope
Posts: 102
So I got some nice asparagus at the market. I'm thinking of grilling it on the egg. I'm not sure about method and temps. I was thinking of steaming it for a couple of minutes then on the grill.
Any suggestions?

basselope,
My favorite way to do asparagus on the egg is to wok it. Here is a link to my version of Nature Boy's recipe. He says I use too much sesame oil, I think. Whatever, play around with the marinade. It's incredible and if you like smoke flavor like I do, don't be afraid to use the smoke.[p]TNW

basselope:[p]Another way is to brush the asparagus with olive oil and season with your favorite rub. I grill till cooked a bit, but I know others that like their vegetables with a little charring.[p]

basselope,[p]I'll prepare the asparagus just as Darryl has posted. I'm one of those that like grid marks on the asparagus, so if you want, just roast them a little longer. You could probably do a half and half too - half pulled before charring, and half with the grid marks.[p]Puj

basselope, a recipe somewhere in this forum is my favorite.[p]After breaking off the tough ends, boil for 2 minutes then cool in ice water. Apply some olive oil and season w/salt and cracked pepper. Divide into groups of 5 spears or so. Wrap the prosciutto around the middle of the spears with the ends of the spears poking out Put a toothpick though this assembly of spears held together with prosciutto to keep it together. Grill on high heat until the prosciutto is crisp.[p]Wish I knew who to credit with this fine method!

The Other Dave, I think we have Carnivore to thank for that (out of "Let the Flames Begin" by Schlesinger and Willoughby)

The Naked Whiz,
The fresh spears have a natural breaking point. Hold one end in each hand with your hands about six inches apart. Bend the spears and they will break in two pieces, grill the tips only. After washing, place the tips on a platter. Pour olive oil over them, season with salt and fresh ground pepper, then roll to coat. Experiment to determine your preference as to doneness. I prefer them a little crispy. These are delicious and folks that don't like canned asparagus will beg for more of the grilled.

Bill:[p]Speaking of asparagus . . . I have 500 crowns I replanted two years ago in the garden. This is the first year for a regular harvest. I am expecting to hear from you around the middle of March . . .

djm5x9, btw, go down below and answer the question about smoked cheese.

djm5x9,[p]And Scottie said you couldn't do noodles on the grill because they fall thru - ha. I bet you could as long as you layed them out perpendicular to the grid like that. That is a purdy picture. I like mine with them black marks - yum[p]Tim M

Tim:[p]I munch on asparagus as I pick it from the garden, but grill marks are OK too. Tomatoes with a little charring is great! I know these are a little green, but if you like fried green tomatoes, you will appreciate them grilled too.[p][p]

basselope,[p]Asparagus is my favorite vegetable, so I have tried every way imaginable to grill it and I haven't found a bad one yet. However, Steven Raichlen's recipe in "How to Grill" outdoes every other way I've tried so far. [p]Sesame Grilled Asparagus[p]1 lb. asparagus
2 T. dark sesame oil
1 T. soy sauce
1 clove garlic, minced (I use the prepared jar stuff)
kosher salt and black pepper
2 T. sesame seeds[p]1. Clean asparagus as others have posted below. Take 5 aparagus spears and skewer them together with one bamboo skewer just below the tip and another about 1" from the base of the stalks. This makes little asparagus rafts and they are very easy to turn and work with on the grill.[p]2. Combine sesame oil, soy sauce and garlic in a small bowl and mix well. I use a baking dish and then place the asparagus right in the oil mixture. Turn to cut and brush well with the mixture. Season with salt and pepper.[p]3. Grill asparagus for 2-4 minutes per side or until nicely browned. Sprinkle sesame seeds on rafts as they are grilling.[p]Enjoy!!![p]Keep the smoke risin',[p]Jim
