White veal shoulder

Haven't had que'd veal in a while. Shoulder is kinda tough, even in provimi. Rubbed with olive oil and fresh chopped garlic, coarse sea salt and pepper,

Did a high sear for a short time and closed up,

Some bacon wrapped asparagus and my new invention ZippyBT's. Just an Italian pepper wrapped in bacon.

You talked about it being a little tough -- so was that a lo-n-slo cook or hot until done (what temp)?

I'm sorry. I seared it and just shut the vents down to about 225. Maybe an hour and a half like that. It was pretty tender.

looks good steve! i had veal steak of some sorts last night for supper. think it was called veal scalopini something?? it was my first time eating veal ...it was good stuff very lean but i cooked it rare so was very tender.
