BBQ Chicken Salad with Lime Dressing

Here is a little something me and my wife have come to love. I usually do this with leftover chicken breasts and make a dressing for the lettuce combining olive oil, lime zest, fresh lime juice, white wine venegar, and salt.

1. Toss the lettuce in the lime dressing
2. Chop up grilled chicken breasts and throw on salad
3. Add black beans, cilantro, cheese, sour cream, tortilla chips and drizzle with BBQ sauce.

This was based on a BBQ chicken salad we used to get when we lived in Nashville.

    It doesn't take much dressing because I toss the salad in it (so it gets a good even coating.

    I don't measure anything, but here is how I do it...
    - I put about 1-2 tablespoons of white wine vinegar in a large bowl
    - add the zest of 1 lime and squeeze in the lime juice from the zested lime
    - pinch of salt
    - I let that mixture sit until I am ready to put the salad together
    - lastly, I whisk in olive oil (probably about 1/4 cup) until it tastes right

    Sometimes I get excited with the olive oil and end up adding more white wine vinegar if needed
