Pulled Pork, rest time

Hi All,[p]Made my first pork butt tonite. 7 1/2 lbs! Surprisingly enough, it only took 12 hours to reach 200 deg. I thought I'd be in for a longer night! In any case, my question is, should I let the meat rest for a while until I pull it or should I do it as soon as it comes off the egg? I've heard folks do both. Anyone want to give their 2 cents?[p]Thanks

    12 hours aye?? what temp did you cook the beast at i wonder? I am actually sitting up at 3:30 am here watching the temp on my first one as well. Can't seem to get it lower than 250 for some reason.[p]

  • BobM,[p]Fifteen minutes should be enough if you will eat right away. If there will be a time delay just wrap it in foil and in a layer of cotton towels, then stuff it in a cooler until time to eat then unwrap and pull. [p]Hope that helps,

  • Dagwood,[p]Cooked it at about 275 but like you, that's about as low as I could get it to go! I was fantastic though. I think I might have put too much lump in the box.
