Brunswick Stew

I plan to make pulled pork and Brunswick stew for Christmas Eve and I am in need of a good recipe. I have looked in the recipe archives but I would like to make one that someone has tried.

    Here is one.

    Stew, Brunswick, Mull, Fishlessman

    this is the one i used. used a beer can chicken, pulled pork, and pulled beef. the chicken and pork i had frozen and the beef was cooked the night before. lodge camp oven and about 300-325 to get a good simmer.Recently, I was on a quest to find the perfect Brunswick Stew. Althought myresearch led me to several excellent recipes, I was looking to duplicate ataste from my youth provided by some dearly loved and much missed unclesfrom eastern Georgia. During my search, My father, who spent many a nightcooking a holiday hog feast with these uncles, gave me the basis for thefamily "mull". It is my pleasure to share this recipe with you. Hope youwill give it consideration.




    INGREDIENTS:
    2 lbs BBQ Pork butt smoked
    2 lbs brisket
    2 lbs grilled chicken
    5 Large Yellow onions
    4 14 Ozs. Bags Frozen white corn
    2 Cans Rotel (more or additional jalapenos if desired)
    1 102 Ozs. Can Whole tomatoes
    Black pepper, salt and cayenne pepper to taste




    Procedure:
    1 In a 16" Dutch oven:
    2 sauté chopped onions till golden.
    3 Grind refrigerated meat (grinds better) with coarse grinder and add to
    4 Dutch oven
    5 Grind two bags of partially thawed corn and add with remaining two bags to
    6 Dutch oven
    7 Grind Rotel and whole canned tomatoes, add with all juice to Dutch oven
    8 Add two small cans of tomato sauce to Dutch oven
    9 Season with black pepper, salt, and cayenne pepper.
    10 Cook in oven with lid off at 300* stirring occasionally to blend for two
    11 or three hours.

    Foxy, I have used Red's Brunswick stew recipe listed in the cookbook on this forum at least 5 times and always get rave reviews...now I do 'modify' some but that is the beauty of b'stew..you can add or take away just about whatever you think will be good...sometimes I thin with beer, sometimes wine, sometimes I use different meat, just try Red's as a base and go from there ;)

    Stew, Brunswick, Poultry, Pork, Red's, SloMo

    Basic Georgia style Brunswick Stew


    Ingredients
    2 cup Barbecued Pork - Chopped
    1 cup Barbecue Sauce
    2 cup Cooked chicken - Chopped
    2 Tbs Butter
    2 cup Crushed Tomatoes
    Whorcestershire Sauce
    1 cup Onions - Chopped
    Cayenne Pepper Sauce
    1 Can 10 oz can White Corn
    1/4 tsp Salt & Black Pepper
    1 tsp Garlic - Finely Chopped




    Preparation Directions:
    1 Slow cook a Boston Butt for the barbecued pork and chop. 1+/- lb. = 2 cups. Do not chop too fine, about the size of your thumb nail.
    2 Cook the chicken, it can be grilled, boiled, broiled or fried (I slow cook on BGE). A small hen is about 2-½ cups. Do not chop too fine.
    Cooking Directions:
    1 Melt butter in a Dutch Oven (cast iron are best).
    2 Add onions and cook till tender, then add the garlic, tomatotes and corn.
    3 Simmer 5 minutes.
    4 Add pork and chicken.
    5 Cover and simmer slowly for 1 hour.
    6 Add salt and black pepper, Worcestershire Sauce, Cayne Pepper Sauce to taste and Barbecue Sauce.
    7 If mixture is too thick add a small amount of water (beer works fine).
    8 Taste.
    9 Adjust seasonings if necessary.
    Special Instructions:
    1 Brunswick Stew can consist of almost anything. Some recipes call for Rabbit, squirrel, goat, etc. Add anything you like.
    2 Brunswick Stew is great on a cold winter's night with a large slab of Red's Cornbread dripping with butter. You stand a better chance of getting gold out of Fort Knox than you do of getting her cornbread recipe.
    3 Many BBQ joints serve Brunswick Stew as a side dish with BBQ pork.
