I got some 2 inch thick pork chops to egg. Any suggestion on temp. I am thinking sear like a steak but these are so thick

325 indirect, Coat them with your favorite rub. Pull them at 145 internal. Little Apple smoke would work here.
2" Pork Chops are bone-in pork loin roasts
If you have a Raspberry Chipotle sauce serve with that. -
I like to smoke low and slow indirect. About 225-250 until done, they come out so moist.

These were covered with an apricot/bbq sauce mixture.

I usually cut a pocket and stuff them, then lightly rub the outside with EVOO and rub with a mixture of spices and herbs. I usually have the egg between 375 and 400 and cook to about 145. I use an instant read to tell when they are done.

Mike,
I'm with you on that. I do most of my pork at 250*

To dang easy. Even egret proof. :woohoo:

"until done" is not specific enough for him..
What does "done" mean? Exact time till "done"
Nope not egret proof.. -
I always cook my pork chops (2" and thicker) at 400 degrees until the internal temp is 145. If they are fat around the edges, I'll stand them on end and sear the edges all the way around.
