Hot and Fast Brisket

I had been toying with the idea of a hot and fast cook for a while and decided today to give the brisket a try. For the most part I liked it. I cooked the brisket at 375 dome and after three hours it was 147. So I foiled at that time. I was right on schedule to only have about another three hours to go before I had the guru fan collect ice, so that slowed the process a little. I think six hours would have been done. The brisket was still very juicy and I liked the flavor a little more. The bark was very similar to what I would have on a regular brisket. Next time I will adjust a few small things and see what the results are. I expect a moist brisket similar to low and slow.
