Looking for a fast, impressive party recipe

So, we're having people from our church care group over for a Christmas Social this Wednesday and I talked about the turkey we did on the BGE so much, I sort of promised to make something. It's a pot luck and everyone else is bringing something, but I want to dazzle them.

Problem is, I have a meeting at work in the afternoon and won't be able to get home until about 5:00pm. People should show up around 7:00pm. So that's not enough time for a turkey.

I can do the fire set up the night before and spark it as soon as I get home.

What's a good, fast recipe I can make that would feed (more like give everyone a sizable taste) 30ish people?

    For an entree I would do 3 Pork Tenderloins.

    1 I would wrap in bacon and put a rub on it

    1 I would butterfly and stuff with cheese, spinach and pine nuts

    1 I would butterfly and stuff with chopped apples & raisins

    all of these you can prepare the night before....cook direct on a raised grid at 350 until the meat is 160+. It should not take more than 1 hour and you can cook all 3 at the same time...

    For 30 People I might triple this. The meat can be prepped the night before and safely stored in your refrigerator.

    Bacon Wrapped stuffed chicken breast are great too. Stuff a few with cheddar and mushrooms, few cheddar and asparagus, few with sun-dried tomatoes and italian cheese blend.

    For 30 people you can probably do up 15-20 breasts the night before.

    I do the breasts like Pete is talking about a lot. I add in a little chopped spinach for color and because I like it, when you when you slice it it looks very wowwy. each breast will give you about 4 nice size slices for sampling. the pork loin is less work though, not as many pieces to handle, to make and tend to.
    Another one is to take a sheet of puff pastry and cut in to 9 squares. then make a little cut from each corner of each block in to the center but don't cut all the way. dot center with 1/2 tsp pesto or your favorite filling. I bet La Bomba would be good, but guess I will never know :whistle: then bring each tip into the center and press. these can be made the night before and put in the frig on parchment paper. then just slide onto your baking stone and cook for about 10 min till hot and golden and puffy. shoot the picture of them is on my pc at home. i will post it tonight.   • Pete's idea of bacon-wrapped chicken breasts is a great one, though it'll take some real estate to cook them all at once. I think I've put around a dozen on a single grid before, and it was pretty crowded.

    If you have an Adjustable Rig with an oval grid, you could conceivably cook on three levels and use the spider with a pizza stone or drip pan to go indirect.

    If you want simple but impressive, you could cook half a dozen pork loins (not tenderloins) on two levels. Sam's has some portabello-pepper and lemon-pepper loins that are simplicity itself to make, very, very good and will take about two hours to cook.
