Post some Fatty Recipes!!!

Ever since I saw this dude on youtube smoke a fatty I am highly aroused by the idea. I still have yet to do it. I know you can put anything in there, but I am not creative and a tad slow at times, so please if you have some great fatty recipes, don't hold out. Also, pics are good too, more arousing than just the idea of fattys.

These are far from earth shattering but ones I've done in the past and enjoyed. Cheddar stuffed, mozz. cheese stuffed (kinda bland), pepper jack cheese and our favorite is Maple sausage basted in Maple syrup while cooking. I also roll in some sort of rub (ragin' river..etc.). If you try any, I would try the Maple. Here are a couple pics I found of my cooks:

I have stuffed some fatties with chopped apples & sharp cheddar cheese.

My favorite is using good (from the butcher shop) med or mild pork sausage. I roll it in maple syrup and coat the sausage in Dizzy Pig Swamp Venom. I cook it indirect at 300 degrees until 175 internal. No stuffing necessary... : :P ...it is delicious

i made this before i knew what a fattie was, whatever you have on hand will work, you would be surprised how well pine nuts and raisins work in one of these, this one had different ground meats instead of the traditional jimmy dean

I keep them simple. JD hot, swamp venom stuffed with red peppers and white or yellow sharp cheddar
