heres my lazy turducken!

Its a chicken mousseline with sage & brown rice, stuffed in a turkey breast, then rubbed with duck fat, rolled & tied and guava smoked on my large egg . crispy skin, with great contrasting flavors. I would say its not as good a the true turducken but much less weird!!!

Be-utiful! Almost looks like a loaf of bread! Of course, if you want the duck meat (my favorite) you can always order one from LA. Heck, our gorcery store actually has one made by Tony Cachere's...but then again, I bet yours tastes a million times better and the pride in cooking wouldn't compare!

Austin Smoker, for what its worth, I have been cooking a couple turduckens a year for about 15 years and the only one I would never do again is the Tony Cachere's brand. Zero flavor and dry. PopsicleWillis Tx.

Thanks and Good to know...I think I would have had a hard time beating the ones I buy from some of the specialty meat shops in the "Basin".
