Bubbacakes - 3 ways

As some of you are aware, a meat cupcake has been in development by bubbatim for some time. What you may not know is that I have been collaborating with him behind the scenes to try & bring this idea to the masses. In its latest incarnation, bubba used 41mm mini cups to fashion what he calls dainty bubbettes :ermm: . Formed of a mild breakfast sausage filled with rose petals macerated in essence of lavender :huh: , he paired the cakes with toast points & jasmine tea :blink: ; apparently now completely in touch with his inner-woman :P , bubba created a soothing ambiance with a fabulous table-scape (see photo 1).

We argued. There was a heated exchange.

My interpretation features Italian Sausage packed with cayenne peppers :evil: , sauteed onions, garlic, sage, & sharp provolone, capped with more sausage then smoked over hickory at 425 degrees for about 30 minutes (see rest of photos).

In a second version I removed the cayennes & provolone and added habanero & olive oil laced feta ‘icing’.

I replaced bubba’s toast points with a pile of homemade hand cut random width #4 Tagliatelle dressed with extra virgin olive oil & black pepper -

I don’t have bubba’s flare, so I just put it on a plate.

I have been drinking.

    Zippy I am worried about you, very worried! You should know enough to NEVER burn a votive with out a holder!

    Normally yes, but there is so much flavor in the bubba cakes, including garlic, that I chose not to as I believe the delicate nature of parm would have been lost in the shuffle - this plate was consumed in complete harmony;

    Note I even dispensed with the usual Locatelli :ohmy: , a much bolder cheese, for the same reason.

    Well now...I got to say that was good. Very creative and I got to say the Tea Cup and candle was good.
    I only problem is that that just aint me. All that know me really understand where I came from and my roots. Yes, it is even true, "thats, I cleans up well". Rose peddles? ya right. Lavender? In YOUR dreams! However, I must applaud your creative endeavor. So how were they?
    And I must say, for a bakin sissified bi-och, you do make a grand attempt at meat.

    Don't you remember that I have been out of town helping a certain newly appointed politician. You have been duped! That was my evil limp wristed twin. The tea should have given it away. I drink coffee. I do like your versions of the bubba cakes. What type of bread crumbs did you use? Did you find the first batch a little smoky?

    true, true, my scam has been exposed, as for the cakes, I didn't use breadcrumbs at all, just what's in the post. Pretty straight up. They were really good, not too smoky because I had used some hickory that was already 1/2 burnt so it didn't give offf too much. Also, the ratio needs to be adjusted, too much sausage with the lid on top, thinking about just going with open cups & stuffing a lot more filling inside, then maybe putting the cheese on when they are just about done - definitely worth further development
