    VAMike,
Piece of (bread)! As jwitheld said, just set up for indirect. For a crispier crust, add a water pan to your setup. Allow 15 to 20 minutes before putting the loaves in, to bring all the setup to stabilize at temp. I bake at 350 to 400°, 45 to 60 minutes. Oh, and "left over" charcoal reduces the amount of smoke.

  • Great! I gotta try the bread this weekend! I'm gonna try dinner rolls! Both will cook quickly and will follow a rib roast out of the egg as it sits for a few minutes to rest! Mr. Egg will still be hot enough with most of the smoke gone.[p]I may try to do a whole loaf as well, time permitting.
