Seth Howard is cooking Johnsonville Brats...

Well, last time that was heard in the neighborhood, it was to warn everybody of the abismal tragedy that was taking place in Sir Egg. My brother "threw a few on" right after i had been cooking some burgers at about 600*. Let me just say that i spent the next few days trying to find the name of the farmer that raised that pig so i could apoligize for what happened next. Four turds is the best way to describe it. Well, i am going to try my hand with these today and am looking for advise. I have seen boiling in beer, low and slow, quick and easy, etc... You guys tell me please. Time, temp, etc... I will be cooking on a raised grid direct unless directed otherwise. I hope all of your Super Bowl cooks go as planned.

    Seth Howard,[p]As a 45 year season ticket holder(22 tickets total) to the REAL America's Football Team............[p]The REAL way to prepare brats is pretty simple and straight forward........[p]SIMMER(not a rolling boil) in beer, butter and onions. Do this for about 20 minutes. Then grill over high heat....about 10-15 minutes should be good. Then back in the beer mixture until served. [p]Now, I have done this same routine in the opposite order...grill first, then simmer in beer and onions. None of us really noticed any change in taste, texture.[p]Once the brats are cooked and holding in the beer mixture, remove some or all of the onions and carmelize them over high heat in a frying pan.[p]I don't bother with any smoke, not many REAL fans care for it. Of course, nothing wrong with slow smoking them, some folks do, but not in any tailgate parties we have attended.[p]Stogie

    Stogie:[p]I hear what you are saying, but simmering sausage in water is akin to boiling ribs . . . I just find that this method takes away flavor. Just my personal taste, grilled sausage is hard to beat . . .
