    <p />VAMike,
You could try spatchcocking them. They are just little chickens. I'd start with 350 degrees for 45 minutes, direct on a raised grid. Here is a link to my webpage on spatchcocking chickens.[p]TNW

VAMike,[p]JJ had a great cornish hen recipe. States for 2 hens, but I've done 4 out of it with no problem. Involves a batter and is in the recipe folder. Have to admit these are my favorites just about. Here is it in case you can't find it:[p]Ingredients:
    • 2 Cornish Hens
    • 1 Eggs
    • 1 pt Sour Cream
    • 6 Tbs Italian bread crumbs
    • 6 Tbs Parmesian Cheese [p]
    Preparation Directions:
    • Mix the eggs and sour cream and coat the birds completely. Mix the
    • Italian bread crumbs and parmesian cheese then liberally cover the birds with this mixture. [p]Cooking Directions:
    • Get the EGG up to 350* temp and place birds on a rack over a drip pan. Cook for 1 hour and then kick up the temp to 400* for 10 minutes to brown. [p]

  • Thanks for the help! Those hens are looking are tasty, and alomost ready to come off the egg![p]Michael
