Local store was running wings on sale @ 50 cents a pound. Also had brisket for 99 cents a pound, so the obvious choice is brisket. My notes say 2 hours per pound. Y'all really think I'm looking at a 24 hour cook on this 12 pounder?

Brisket is a balancing act of heat and remaining moisture,
2 hours a pound is too long. Depending on the grade of the brisket the time can very greatly. A prime brisket that size can take less time (up to 4 hours less).
What grade is the Brisket?
How much fat cap?
1 to 1 1/2 hours per pound is a better time line.

If you keep your cooking level temp at 225+ (dome 250+), I think more like 15-20 hours should doya. You prolly have a "select" grade brisket, so might be toward the upper end of that range.[p]Have fun with it!
