just got this great piece of meat and need a few recipies for tonight! any suggestions?

I'd heat the egg to 325 or so.
Shake on some Sea salt and Pepper, wrap it in some Prosciutto De Parma and roast it till 140 or so internal.
Bacon will work if you insist
