First time shoulder.

I have a ten pound shoulder I want to cook this weekend. What temp? What is the approximate cooking time? I don't want to make this too complicated. I was going to start at 7:00 am.

    MemphisEgg,figure 2 hrs per pound cooking at about 225°-250° dome temperature. If you start at 7 am then you should be done sometime early the next morning-- like 3-4 am. If I was you I would start about 6 pm, make sure the temp is stabilized before going to bed, and then next morning you will be able to make sure that your fire is still okay.[p]You will hen expect to be done sometime early afternoon.
