King Fish:[p]If they are large fish, cut them into steaks, season, and grill at 375º till done. Typically, I cut mine about 1" to 1 1/4" thick.

I've done blackened catfish in a cast iron skillet. Works great. This really doesn't take advantage of the flavoring characteristics of BGE, but you can get a skillet really hot, which is required. If you do this indoors, every smoke alarm in the house goes off and the neighbors might call the FD. Recipes are all over the 'net ... include "prudhomme" in the search.[p]If you close the lid, WATCH OUT FOR FLASHBACK!
