First time doing Pulled Pork Enchiladas

I posted the same thing on the smokering so if you already read it, don't waste your time :side:

I had about 1/4 of a gallon ziplock bag of pulled pork left from my saturday cook. The pork itself was great, but I to finish it in the oven at 250* for the last 2 hours due to my inexpertise (I just made that word up) with my newly purchased BGE.

Anyway, I called my mom and got her recipe for enchiladas because growing up they ruled, and still do. Best mexican food made by an Irish lady in Chicago, hands down!

I mixed the pork and half a can of refried beans in a bowl. I then threw the bowl in the microwave for about 2 minutes. I then mixed the pork and beans up some more, stirred in some finely shredded "mexican" cheese mix, and about half a can of enchilada sauce (red). I then took the other half of the enchilada sauce and coated the bottom of the pan with it.

From there I took about a forkfull of mixture and put it into flour taco tortillas and smoothed the mixture out. I closed the tortillas and put them open side down in the sauce covered pan. I made 8 total with it being a nice tight fit. I then poured and spread an entire can of red enchilada sauce on top of the filled tortillas. From there I coated the entire dish with shredded cheddar cheese.

I put it in the oven for 30-35 minutes at 350*. I made some Old El Paso Cheesy Rice Mix and heated up the left over beans. When the wife and her friend got home they were treated to a good meal. All 3 of us thought it turned out great.tim

  • Had to laugh at the "Best mexican food made by an Irish lady in Chicago" line....that's good.

    I LOVE pulled pork enchiladas, especially during Hatch Chile season..that means GREEN sauce, not red. Killer stuff. Just goes to show you - pork rules!
  • We love enchiladas and have cooked them at a few EggFest. I think our first time was @ the FL Fest 3 or 4 years ago. If you look at some of the old timers web sites you can find my wife's recipe in the Fl Fest section. They rock.
