Does anyone know of a guide that can help someone determine how long to cook meats at low temps? Most things are based on 350 degrees.

Low and slow is usually considered, for us, to be at 250º plus or minus a few degrees.

Pork butt and pork shoulder 1 1/2 to 2 hours per pound is a rule of thumb. But use a thermometer to determine doness. Butt and shoulder are usually finished at 190º - 200º

    Hope this helps
