<p />Hi All:[p]Here is a pic of my Sunday cook. Since I never got to make the Stroganoff, I was still in a mood to do a dutch oven cook, believe it or not, it STILL didn't happen. As I was searching for recipes, I came across this stew recipe in the "old version" of Bill Wise's Cookbook (and maybe it's still in the new one). The recipe was originally posted by Bob and he gave credit to Timothy Sparrow, "Georgia On My Mind Magazine". [p]After reading the recipe, I decided to do a "freezer dump", i.e. I just took all sorts of foodsaved leftovers and added them to an 8 quart stock pot. I used prime rib bones from Stogie's "Kevi's King of the Roasts", EZ Life pulled beef, Dizzy Dusted chicken wings, Memphis Style pork loin, and spatchcock chicken with Tony Chachare's seasoning. Then I covered them with water and let everything fall off the bones. After about 4 hours, I removed all the clean bones (my dogs couldn't believe it when I gave each a prime rib bone) and began to add veggies. Well, the 8 qt stock pot filled up and I had to add another 5 qt dutch oven to handle the overflow. But then everything wasn't getting mixed together properly, so I dumped both of them into the biggest pot I own, a 22 qt pressure canner. By the time I served the stew at 7pm (after cooking some 10 hrs), I had filled that monster pot about 3/4ths full. [p]IT WAS THE BEST STEW I'VE EVER TASTED.....If you haven't done this yet, DO IT! It was unbelievable....[p]QBabe
:~)[p]I wound up giving about 10 qts away to family and then froze the rest. Just had some again for dinner last night, and it reminded me that I'd never posted about how good it was. Enjoy!
