Duck for Thansgiving

I need some advise for cooking a duck . I have every DP spice including John Henry pecan what would you use for the rub and what kind of sauce for the final phase I was planning slow cook at 250. I have Plum sauce and sweet and sour sauce I would appreciate the help

    Options
    Roast them indirect whole with what ever light rub you chose to about 120 breast temp. with a LOT of smoke then take them in and finnish in a big pot of dressing in the oven. Duck makes some great dressing!
