I don't. I cook direct. Plenty moist and tasty.

Thanks a bunch. I have always spatched our chickens but after reading the posts about this, decided to give it a try. The bad news is that I didn't have any canned beer so had to use a Coke can, open a bottle of beer, and pour half into the Coke can. I put some fresh garlic, green onions, and rosemary into the can also. Have the bird rubbed with olive oil, lemon pepper and salt and am gonna throw some branches of rosemary into the fire. I had decided after looking at the pic that I was not going to use the drip pan, so I am happy to know that's what you do. Oh.......had to drink the other half of the beer....drat.
