leftover mussels???

So, Randy and I had mussel scampi last night. A little more than we could eat. So, I got the meat out of the remaining shells...about 1 pound. NOW...what do I do with it? I thought about a mussel chowder? Any other ideas?

I would add them to some linguine, or maybe fettuccine with alfredo. Assuming they are already seasoned with garlic from the scampi I think that would be a good mix.
You could also do a mussels primavera. Or make a frutti del mare.
Of course, the chowder idea sounds good too. -
mussel pizza?

We love mussels and often have leftovers.
Do one of our favorites - seafood pizza. Add a few shrimp, a scallop or two, and if you are into anchovies as we are, a few of those. Lots of fresh herbs, red onion, and your choice of cheeses (for us, fontina, mozza and a touch of grana padano. You can use a marinara sauce too, but we just add a touch here and there of tomato paste. Oh, and some dry crushed red pepper just for fun.
Wish we were there for the pizza bake.

Bonefish Grill Mussels
4 cups mussels
Steam mussels in skillet over high heat until shells open up
Combine the following ingredients to taste:
Chopped red onion
Chopped tomatoes
Kosher salt
Minced garlic
Basil cut in strips
Annissette (licorice-flavored cooking liquor)
Lemon butter sauce
Combine all ingredients to create a sauce, pour over mussels in large bowl. -
