tri tip and chicken

Last Sunday I did a 3 1/4 lb tri tip and 4.7 lb chicken. Smoke/cooked @275 for three hours then raised to 325 for the last 30 minutes. Both were great. The beef still had some "pink" and the bird was really juicy. Did not marinate the chicken as I usually do because of time restrictions. Everyone was happy. tstick
