What comes first The mustard or the rub?

Porky Paul:[p]I always rub first. If I do use mustard it is a real light coating on top of the rub. Cooking direct I find that I develop a good bark just the same.

Porky Paul, I experimented with my last two batches of ribs - one rub first then mustard, the other mustard then rub. Used the 3-1-1.25 method. I think the rub-then-mustard ones were a little better. They seemed a bit more tender - could have been the pig they were harvested from - who knows? Anyway, it was fun trying both ways and gave me an excuse to make 2 batches of ribs so I would definitely recommend trying both. Good luck.[p]

I would do the rub first, then the musturd. Putting the rub down first would allow the rub to come in direct contact with the meat first. The musturd having a bit more liquid to it would fill in the crvices around the grounduals of the rub and then soak through the rub itself? The flavors of both will "marry" as they flavor the meat.[p]There's my 2 cents worth![p]Michael

djm5x9,[p]I do it your way too -- actually I don't use mustard anymore except on pork butt, but the rub goes on first and mustard a few hours later.[p]Tim
