Smoking whole large lake trout

Any suggestions? Temperature/time/??? Trout is 26 inches and about 3 pounds.

    Cook it with the head on.....rub with olive oil, lemon juice, garlic, salt, and tuck your favorite fresh herb inside. Doesn't take long to cook fish, depends on how thick it is.

    Richard,[p]I do big trout at 250 for about an hour and fifteen minutes. Lots of smoke - it just falls off the bone. Be sure to put it on a fine-mesh grid -- it gets so tender that it will fall through the wider grid.[p]
