Help! Butt stuck at 140 degrees

I have been cooking an 11 pound butt since 7 PM last night, It is now 12 pm so the butt has been cooking for 17 hours. The cooking temp has always been around 200, except when it fell to 180 in the wee hours while I slept. The internal temp deep inside has not risen about 149 and there it sits. I have now cranked up the cooking temp to overe 300 and I still get no movement on the internal probe. I have checked with an instant read and the temps are accurate.[p]What do I do now? I can't imagine how long it will take to get this sucker up to 200.[p]Milt

    Milt,[p]Not to worry! Your cooking or dome temp of 200 degrees was really too low. The dome is usually at least 20° higher than the temp at the actual cooking grid and 200 is the internal temp of the butt you should be shooting for.[p]Leave it at 300 on the BGE thermometer and just be patient. You still have several hours to go and should soon see the meat temp rising again.[p]A suggested dome temp for your next butt is 250-260° and should take about 18 hours for any size over 6 lbs IMHO[p]K~G

    A couple of things. First of all, I always cook my butt's at 200 degree egg temp and it takes about 22 hours to cook. Second, an 11 lbs butt is a bit bigger than what I buy, I usually buy 8 pounders. I'd say go ahead and bump the egg temp to around 250 deg. Once the internal temp of the butt climbs to about 175 deg, go ahead and raise the temp egg temp to 300 deg. I hope you weren't planning on having this for lunch. I'm betting it will be ready by six or so.

    Milt,[p]It is hard to get the internal temp to 200° when you cook at 200°! Increase dome temp. I start cooking mine at 225-250° and bump them up to 275° when they reach 170° or there-abouts.[p]Tim
