when you all cook paella on teh Egg do you keep the lid open or closed.

When I did it, I did the sofrito on the stove top and once I added the rice, put it in the Egg. -RP

But did you leave the top open or close?

I leave it open until the point where you add the water. Then I close the lid, reduce the heat, and let it do it's magic.

Well... open for the sofrito then I add the rice, and stock... and then I close. 375- 400 dome for about 20 minutes

The only time I cook with the lid open is when I am using my Wok. Only because closing the lid defeats the purpose of "STIR-FRY" Can't keep stirring it if the lid is closed

follo the whiz's set up. it is PERFECT.
traditionally, paella is cooked entirely over an oak fire.
i cook everything lid open until you add the broth, at which time you shut it.
i light the fire, let it get established (with lid down). then open the lid, shut the bottom vent, and the fire will spread out, all the lump will be lit, and you'll have the perfect fire for cooking with the pan up on a raised grid.ed egli avea del cul fatto trombetta -Dante -

Smoke chips added when liquid is put on the rice.
