Pork Butt Question

As the weather is warm and sunny here in S. California, I am cooking my first pork butt. My question is this: The butt in question is about 10 pounds and has the pig skin on it. Is this the way it is normally sold, or did I just pay extra for something that should have been removed?[p]BTW, I am using JJ's rub, yellow mustard method, Elder Ward's fire and cooking instructions. I am also making Elder's two types of sauce. It's been cooking for 3 hours at an average temp of 204 or so.[p]Milt

  • Milt,[p]A pork shoulder consists of two parts: the upper portion which is referred to as "butt" and the lower portion which is called "picnic". [p]Picnics that I've bought around here are sold bone-in with the skin on, and can easily run 10 pounds. For pulled pork, I usually buy Boston Butt, with a small bone in, no skin and the largest I've found has been about 8.5 pounds. Butts are more expensive than picnics in my area.[p]Either cut is great for pulled pork.[p]Lee

  • QSis,[p]Well, it's cooking even as we speak, but my real question is should I have removed the skin before I seasoned and cooked it? If so, I will do differently the next time I cook one.[p]I would appreciate yours or anyone else's thoughts on this.[p]Milt

    Yeah, you wanted to remove that skin..... is the hair on the skin smelling something feirce?

  • Milt,[p]Two schools of thought. One says not to remove the skin, to preserve moisture. The other school says to remove it in order to get more rub and bark on the surface. People do it both ways, depending on their preferences or beliefs, but either is fine. [p]The one time I cooked a picnic rather than a butt, I left the skin on and it was great, but then again, I think bark is overrated. I like the inside meat better, and I toss it all with a vinegar-based hot/sweet sauce so it's ALL good![p]Lee
