Tonight, I will be trying the Mexican Meatloaf recipe. With dome at 350, approximately how long will it take for polder to reach 160. Are we talking 20 minutes or 50 minutes. I am trying to plan dinner around a 7 week old's feeding schedule.[p]Thanks for all your help - Banker John

Banker John,
I have done one of these two times and think they are wonderful. At 350¡ you should use an indirect set-up with plate setter or fire bricks. I put mine in a casserole dish and set that on top of my plate setter. I do not recall exactly how long it took to finish, but I am thinking 1.5-2 hours. However, I cooked mine to an internal temp of 180¡ because I mix ground pork in with the beef. I recommend the corn casserole that goes along with the meatloaf. It is also very good.

Banker John,
I used ground black pepper and a small amount of red pepper for the "spicey seasoning mix".
