does anyone have a good recipe for salmon involving teriyaki?

  • Jim, I like the taste of smoke and teriyaki together so heres what I do. Debone the salmon fillets and soak them in tequila for about 30 minutes. Take the fillets from the tequila but don't rinse them off. Put them in a shallow glass pan and cover them with a combination of 3 parts brown sugar, 1 part kosher salt, some pepper and any other rub you may have laying around. Cover them and put in the fridge for 3 or 4 hours. Remove from fridge and scrape (not rinse) most all of the rub from them. Get the egg to around 180 or 200 degrees, and add some dry wood chunks. Brush them really good with your favorite teriyake sauce and let them cook for about 30-40 minutes, but check them at 30 minutes. Don't let them get to done. I have a hard time not devouring them while they are still warm, but it is really good cold too. I went salmon fishing in Alaska last year and have been making fillets this way for about a year now.
