Beef Jerky
I own the large egg, and wondered what advice I could gather on how to smoke beef jerky in it? Is there an accessory for that purpose, or can anyone offer suggestions? I would like to do large amounts because it doesn't last long in my house! Seems like you would need some sort of rack to do something like that. Normally I do it in the oven...

The Other Dave,[p]They are actually threaded rod with washers and nuts.[p]Sorta look like valves though don't they?[p]Mick

MickeyT, they do look like valves which would have no problem with heat! Wonder how they weld though.

I haven't read all the posts but Gfw's website has a great recipe. I know he has changed it but the River City Jerky was really a good base to start with.
I cook about 4-5 lbs, of trimmed beef at a time. I do this when I have the time to stay home and really watch temp and be able to turn frequently.
