Apple Cider Doughnuts - Good Morning

One of the best parts of Autumn is the aroma wafting out of the famer's market/bakery at any of the local orchards, particularly the apple cider doughnuts. I thought I'd give'm a go at home, so this is my maiden test batch (Disclaimer, not done on egg :( , just an experiment, but for those among us who deep fry on the egg, it is easily adaptable). I searched for a recipe & many of them are similar to what is reproduced below. I must say, although they were good, they were not quite what I was looking for, so my search will continue:




1 cup apple cider
1 cup sugar
1/4 cup vegetable shortening solid
2 large eggs
1/2 cup buttermilk
3 1/2 cups flour, all-purpose
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 x vegetable oil or shortening
Glaze
2 cups powdered sugar
1/4 cup apple cider
Directions
Boil apple cider in small saucepan until it is reduced to 1/4 cup, 8 to 10 minutes; cool.
Beat sugar with shortening until smooth.
Add eggs and mix well, then add buttermilk and reduced cider.
Stir together flour, baking powder, baking soda, cinnamon, salt and nutmeg in another bowl.
Add to liquid ingredients; mix just enough to combine.
Transfer dough to lightly floured board and pat to 1/2-inch thickness.
Cut with 2 1/2- to 3-inch doughnut cutter; reserve doughnut holes and reroll and cut scraps.
Add enough oil or shortening to fill a deep pan 3 inches, heat to 375 degrees F.
Fry several doughnuts at a time, turning once or twice, until browned and cooked through, about 4 minutes.
Remove to paper towels with slotted spoon.
For glaze, mix confectiners' sugar and cider.
Dip doughnuts while warm; serve warm.

That looks really good. I limit myself to only eating donuts once a year - on my birthday. And I'm still not as thin as you :S . No soccer games today? Did you go to the parade?

My daughter (the one applying to law school :ohmy: ), went with her boyfriend. It took her so long to get out of the city that she missed my son's HS football game last night. BTW, the Conrad Weiser football team won the Inter-County League Section 1 title last night :woohoo: . My son's a captain on the team but got hurt on his last play of the night. Don't know if he'll be healthy for he District playoffs next week :ermm: .

We have played at Rocket in the past, also at a place in Oaks, but I think this year we will be back at USTC's giant Airplane Hanger in Downingtown, great place - hope your son is OK, mine just got shelled for about 13 shots, let 2 in in a 2-0 loss (they were playing the first-place team), oh well :unsure:happy in the hut

They are of the cake variety, heavy lead sinkers, the ones I am searching for are cake too but much lighter than these turned out, sort of a cross between cake and yeast doughnuts if that makes any sense, & I have watched them being made before & it looks more like pancake batter than the cement-like stuff I made, but I couldn't find a recipe that yielded such a batter so I went with thishappy in the hut

I'd found this one on Eating Well a few months back. It calls for a donut pan and baking in the oven, but if you have one of those donut batter "guns" or hoppers, it might be worth a try.

Apple Cider Donuts
Approximately 3 tbsp. sugar for preparing pans
2 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 large egg, lightly beaten
2/3 cup packed brown sugar
1/2 cup apple butter
1/3 cup pure maple syrup
1/3 cup apple cider
1/3 cup nonfat plain yogurt
3 Tbs vegetable oil
1. Preheat oven to 400 degrees F (200 C). Coat molds of a mini-Bundt pan with nonstick cooking spray or oil. Sprinkle with sugar, shaking out excess. In a mixing bowl, whisk together flour, baking powder, baking soda, salt and cinnamon; set aside. In another bowl, whisk together egg, brown sugar, apple butter, maple syrup, cider, yogurt and oil. Add dry ingredients and stir just until moistened. Divide half the batter among the prepared molds, spooning about 2 generous tbsp. of batter into each mold. Bake for 10 to 12 minutes, or until the tops spring back when touched lightly. Loosen edges and turn the cakes out onto a rack to cool. Clean the mini-bundt pan, then re-coat it with oil and sugar. Repeat with remaining batter.
Yield: 12-24 donuts, depending on the size pan you are using
Tips
SPECIAL PAN:
You will need a mini bundt baking pan with 6 or 12 cavities or a 6 or 12 cavity donut baking pan

mkc, thanks, this may be what I am looking for, and I do need one of them 'guns', there is a little icecream shop in town near me that makes cider doughnuts with a miniature all-in-one batter gun/conveyer belt/fryer/flipper gizmo that is really cool. Maybe I will try this recipe and just squeeze the batter out of a pastry bag & make odd shapes :silly:happy in the hut

believe it or not that had crossed my mind when I envisioned myself trying to squeeze something that resembles a doughnut out of a pastry bag :laugh: - stay tuned, this expirement will be posted at some point in the future, whether it works :P or not :ohmy:happy in the hut
